I've been following chef and author Princess Dixon from the days she was vending on the corner of Church and Liberty streets in lower Manhattan. She was also an annual treat for dance-weary and hungry party-goers during Brooklyn's famous labor day parade. Her cart always had a long line of fans during the busy World Trade Center lunch hour and everywhere she sold her culinary creations! These dishes were a favorite for hundreds of loyal customers and a staple for me as a vegan. Now that she's moved to Atlanta and set up shop there, New York's loss is Atlanta's gain. Often Times when Restaurant Chef's create cookbooks the recipes. That is not the case with this book. Nothing has been held back and a few gems were included that I have never seen on the menu in the nearly 20 years that I have been enjoying these magnficent meals. Princess has outdone herself and you can do the same by picking up this incredible book.

I visited ATL two years ago and found this little shop. Somehow I seemed to miss the fact outside that they served vegan and vegetarian food, so I went in (I'm sure that wouldn't have discouraged me either way, I love healthy food). I made my order with a very nice handsome man who was very knowledgeable about the food and schooled me on just some of the health benefits it can provide. The food was sooooo good! That's when he told me about the cookbook and gave me the store flyer (which I thankfully still have, that's how I found the cookbook). Now after two years, being back in Boston, and missing some "good ole" Caribbean vegan food, I ordered the book and can't wait to try ALL of the recipes! I will be sure to pass this along to friends and family. Best wishes to Ms.Princess and Healthful Essence I will be sure to stop in whenever I'm in ATL.
